In this authentic South Indian Sambar Recipe, I’ll share the recipe video and step-by-step instructions with photos on how to make the perfect Sambar. Sambar is made with lentils such as pigeon peas(Arhar ki dal), veggies such as carrot, bottle gourd, onions, tomatoes, and spices such as Sambar powder, curry leaves, tamarind, chilli, turmeric, and others that you will see in this recipe. In this recipe, I’ll show how to make Sambar in the Pressure cooker that makes it so flavourful. Sambar is very healthy as it is rich in protein and nutrients. It is a very healthy side dish and the taste of idli and dosa gets so much better with this sambar dal.

Sambar Ingredients
- 1 cup pigeon peas
- water as required
- 1 tsp turmeric powder
- salt as required
- 3 green chilli
- 1 chopped carrot
- 1/2 bottle gourd
- 2 chopped tomato
- 2-3 tsp desi ghee
- 2 tsp oil
- 2 red chilli
- 1 tsp mustard seeds
- 1/2 tsp fenugreek seeds
- 12-15 curry leaves
- 3 medium size chopped onion
- 2-inch grated ginger
- 2 tsp sambhar masala
- 1 tsp red chilli powder
- 1 onion petals
- 4 tsp tamarind pulp
- Coriander leaves
How to Make Authentic South Indian Sambar Recipe (Step-by-Step)
1. The Dal used to make Sambar is very important. Wash and Soak the lentils(pigeon peas) for 20 minutes. After 20 minutes, Put the soaked lentils in a pressure cooker.
2. Add water, 1 tsp turmeric powder,1 tsp salt, 3 green chilies, 1 chopped carrot, 1/2 bottle gourd, and 2 chopped tomatoes and cook it until 4 whistles. Keep it aside.
3. Lets make the sambar masala. Heat 2-3 tsp desi ghee and oil in a kadhai/wok.
4. Add 2 red chili, 1 tsp mustard seeds, and 1/2 tsp fenugreek seeds and fry them. Next, add 12-15 curry leaves, and 3 medium-sized chopped onions and fry them.
5. Once the onions change color to golden brown and become soft, add 2-inch grated ginger and let it fry.
6. Add 2 tsp of sambar masala and 1 tsp red chili powder. Mix well.
7. Add 1 onion petal. Mix well
8. Now, add the cooked lentils and vegetables. Cook and mix well.
9. Add 1 cup of water and mix well.
10. Add 4 tsp Tamarind pulp, and 2 tsp salt, and cook on high flame. Stir often.
11. Add coriander leaves and cook for a few minutes. Turn off the flame after 2 minutes. Leave the sambar for 5 minutes.
12. Pour in a bowl and Enjoy. Serve the sambar with idli and dosa.

Instructions
- Take lentils(soaked for 20 minutes) in a pressure cooker.
- Add water, turmeric powder,1 tsp salt, green chillies, carrot, bottle gourd, tomatoes and cook until 4 whistles.
- Heat desi ghee and oil in a kadhai/wok.
- Add red chilli, mustard seeds, fenugreek seeds and fry them. Add curry leaves, chopped onions and fry them.
- Add grated ginger and fry.
- Add sambhar masala, red chilli powder. Mix well.
- Add onion petals. Mix well
- Add cooked lentils and vegetables. Cook and mix well. Add 1 cup water and mix well.
- Add Tamarind pulp, 2 tsp salt and cook on high flame. Stir often.
- Add coriander leaves and cook for few minutes. Turn off the flame after 2 minutes.
- Leave for 5 minutes
- Pour in a bowl and Enjoy.
