Aalu Kachalu is a traditional and spicy potato-based curry dish or sabzi that is made with potatoes, peas, and spices. We use so many spices to give it a wonderful aromatic taste and flavor that is simply irresistible. In this Aalu Kachalu recipe, I’ve used two very basic ingredients such as aloo(potato) and matar(peas), and a good amount of spices like chillies, garlic, onion, ginger, and spice powders. To make spicy Aalu Kachalu sabzi, first make the spicy paste by grinding the spices. Second, saute the onions till they change their color. Add the spicy paste and peas. Finally, add the boiled potatoes and cook until they are coated or mixed well with the spices. Serve this Aalu Kachalu Recipe as a snack or you can also serve this spicy Aalu Matar sabzi with roti to your family and friends the next time they demand something different and spicy.
Don’t confuse this with the aloo kachalu chaat recipe. They Both are different. Aalu Kachalu Recipe Ingredients
- 4 green chilli
- 1 cup coriander leaves
- 10 garlic cloves
- 10-12 garlic leaves
- 1/4 cup spring onion
- 7 potatoes(boiled and chopped)
- 5-6 tbsp oil
- 1 tsp cumin
- 1 chopped onion
- 1 tbsp grated ginger
- 1 cup fresh peas
- 1/2 tsp turmeric powder
- salt to taste
- 1/4 tsp red chilli powder
- 1/2 tsp meat masala
- 1 tsp Garam masala
How to make Aalu Kachalu (Step-by-Step Instructions)
1. First, chop the following veggies: 4 green chilli, 1 cup coriander leaves, 10 garlic cloves, 10-12 garlic leaves, and 1/4 cup spring onion.
2. Add all the chopped veggies to a grinding jar. Add 1/4 cup water and grind it.
3. Grind the spices to a paste-like consistency, pour the paste into a bowl, and keep it aside.
4. Take 7 medium-sized boiled and chopped potatoes. Chop them into slightly large pieces as shown in the pic below. (Also Check the video). Keep them aside.
5. Now, heat 5-6 tbsp oil in a kadhai/wok on high flame.
6. Once the oil gets heated, Add 1 tsp cumin and 1 chopped onion. Saute on medium flame.
7. Add 1 tbsp grated ginger and saute the mixture until the onion turns golden brown.
8. Add the paste now and stir it on low flame. Add 1 cup of fresh peas.
9. Add 1/2 tsp turmeric powder, salt as per taste, and 1/4 tsp red chilli powder. Mix well and cook on low flame.
10. Cover the lid and let it cook on low flame for 4-5 minutes.
11. After 5 minutes, Add 1/2 tsp meat masala and 1 tsp garam masala. Mix it well. Cover the lid and let it cook for 2-3 minutes on low flame.
12. Add the boiled potatoes and mix well. Cover the lid for 2 minutes so that the potatoes get coated with the spices.
13. Serve it hot. You can pour lemon juice and sprinkle black salt to enhance the taste even more. Enjoy your spicy and flavorful Kachalu with your favorite rice dishes like Fried rice or plain rice, and roti like tandoori roti or butter naan.

- Take the boiled and chopped potatoes.
- Heat oil in a kadhai.
- Add cumin and chopped onion. Saute on medium flame.
- Add grated ginger and saute the mixture until the onion turns golden brown.
- Add the paste and stir it on low flame.
- Add fresh peas.
- Add turmeric powder, salt as per taste, red chilli powder. Mix well. Cover and cook on low flame for 4-5 minutes.
- Add meat masala and garam masala. Mix well. Cover and cook for 2-3 minutes on low flame.
- Add potatoes and mix well. Cover the lid for 2 minutes so that the potatoes gets coated with the spices.
- Serve it hot.
