Besan ka Halwa is a very rich and tasty sweet dish from India that is prepared in many ways and variants during festivals and celebrations. It is usually made with besan/gram flour/chickpea flour, saffron, sugar, cardamom powder, and clarified butter. The word “Besan” is Gram flour in English and Halwa is a Sweet dish that has a pudding-like consistency and texture. In some variants, the Besan Halwa recipe is also made with milk or condensed milk which makes it even more creamy. It is very healthy as gram flour or besan contains protein and fiber and this recipe also has added nutrients from saffron and clarified butter. Halwa is a very popular sweet dish in India and here we also make other types of Halwa like Gajar ka Halwa and Suji ka Halwa.
What is Besan ka Halwa
Besan or gram flour is an Indian sweet dish made during special occasions and festivals such as Diwali. The dish uses dry fruits, ghee, and saffron for flavor and Besan is also used to make other popular sweets like Besan Ladoo. Whenever we make anything by roasting besan in desi ghee, the air fills with its aroma. In this recipe, I’ll first make sugar syrup with water and add saffron and cardamom for the flavors, and then dry roast the besan with ghee. Roasting the besan is a very important step. Once we get the desired consistency, we will add the syrup to the mixture and cook until we get our Perfect Besan Halwa. Garnish it with chopped dry fruits and nuts to make it flavourful and enjoy this healthy Besan Halwa with your family and friends.

Besan Halwa Ingredients
- 1 cup sugar
- 2 cup water
- 1/2 tsp saffron(kesar)
- 1 tsp cardamom powder
- 1 pinch yellow food color(optional)
- 1 cup besan(gram flour/chickpea flour)
- 1/2 cup desi ghee(Clarified butter)
- Ghee and chopped dry fruits for garnishing
How to Make Besan Ka Halwa (Step-by-Step with photos)
1. Take 1 cup of sugar in a pan.
2. Add 2 cup water to the pan. Turn on the flame and stir the mixture continuously to let the sugar dissolve. The ratio of sugar and water should be 1:2.
3. Add 1/2 tsp saffron, 1 tsp cardamom powder, and 1 pinch yellow food color(optional) once the sugar is almost dissolved.
4. Stir well and let it boil on medium to high flame. Turn off the flame. The sugar syrup is ready. Keep it aside.
5. Take 1 cup of gram flour(besan) in a pan. Dry roast it for 3-4 minutes on low flame.
6. Add 2 tbsp semolina/suji/rava and mix it well. Dry roast for 3-4 minutes on low flame.
7. Take 1/2 cup desi ghee and add all the ghee keeping aside 2 tbsp of desi ghee.
8. Mix the ghee and the besan mixture together. Stir and roast it few minutes continuously until it changes golden in color and fills the air with an amazing aroma.
9. Now, pour the sugar syrup. First, pour half of the syrup and mix it well. Next, pour the rest of the syrup and mix well. Cook well on low flame. Stir continuously or it will burn and cook on low flame only. It will thicken.
10. Once the mixture has thickened and got the consistency of pudding as shown below, add 1 tbsp desi ghee. Cook well on low flame and Stir continuously.
11. The Halwa will thicken more. Now add the rest of the ghee. Cook and Stir well on low flame.
12. Once the Halwa has reached the desired consistency, turn off the flame. Keep it aside for a few minutes.
13. I left it for 5 minutes. You can see that it has thickened and the texture is perfect.
14. Garnish with a tbsp of desi ghee and chopped dry fruits.
