Hung Curd is the traditional name of Greek yogurt. Both may differ in texture, and taste, but are essentially the same thing as they are made by straining the Yogurt(Dahi). The straining process of Greek yogurt may differ slightly as it is produced commercially with added flavors and preservatives, but if you’re looking for a Homemade Greek yogurt recipe, and want to know easy steps on how to make hung curd at home, then you’ve come to the right place. In this Hung curd recipe, you can either use Homemade Curd or buy it from the market which I don’t recommend to make Greek yogurt. Make this thick, and creamy, and get all the nutrients as it is high in protein and low in fat.

What is Hung Curd?

Hung curd or Greek yogurt is strained yogurt. It is made by removing the whey liquid from the regular yogurt using a Muslin cloth at home. By doing this, a thicker and creamier yogurt is made. Straining it also reduces the lactose content making it easier to digest. It is delicious and highly nutritious.

Ingredients

  • 800 gm Fresh Curd – Avoid using Sour Curd, and use only fresh Curd.

How To Make Hung Curd (Greek Yogurt) at Home

1. Take a large mixing bowl. Place a strainer over it.

2. Now, place a Muslin cloth over the strainer and Pour 800 gm of Fresh Curd. 

3. Fold the Muslin Cloth from both ends together.

4. Now, bring the cloth from the edges together. Press and squeeze out the excess water.

5. After squeezing out the moisture, Cover and keep the mixture on the strainer.

6. Place a heavy object, press it, and squeeze out any remaining moisture. I often end up using either Rolling Board or a heavy Pestle and they really works.

7. Refrigerate it overnight or for 5-6 hours for Greek Yogurt and 8-10 hours for Hung Curd.

8. After keeping overnight, the mixture will get a Paneer-like texture. Don’t throw away the whey liquid as you can use it to make dough for different dishes such as Butter Roti, Cake batter, and Naan.

How to make Hung curd

The Greek Yogurt is ready now. You can whisk it give it a paste-like consistency and use it to make various dishes such as Shrikhand, Kebabs, Raitas, Dips, and Curries instead of Cream.
