The Masala Pav is sliced pav(buns) stuffed with savory masala or spicy veggie filling. In this Masala Pav recipe, I’ll show you how to make this delicious and easy-to-make pav masala recipe at home. I’ve given a complete video and step-by-step instructions with photos. This is one of the best evening snack recipes. The pav(bun) is toasted in butter on a tawa, and stuffed with the spicy veggie mixture or bhaji. It is immensely popular and loved by everyone, so it has many variations. You can either eat it as a breakfast or as an evening snack.
What is Masala Pav or Pav Masala
Masala Pav is very famous in Mumbai, India. The Masala for this recipe is a savory mixture made from veggies and spices like onion, tomatoes, capsicum, and pav bhaji masala. Pav is a bread roll that is toasted in butter. This recipe uses a lot of butter. Masala Pav is garnished with onions and freshly chopped coriander leaves. It is served with lemon and green chutney(optional) that enhances the taste and flavor of the dish. Masala Pav and Pav Bhaji are two of the most popular street snacks. I have already shared the recipe for Pav Bhaji. Masala Pav is different from Pav bhaji and in this, bhaji is stuffed inside the pav and also used as a topping.

Masala Pav Recipe Video
Masala Pav Ingredients
- Pav – 4
- butter – tbsp
- 2 finely chopped onion
- 1 finely chopped capsicum
- 3 chopped green chilli
- 2-inch chopped ginger
- 12-14 finely chopped garlic
- 2 finely chopped tomatoes
- 1 tsp cumin
- 1 tsp salt
- 1 tsp red chilli powder
- 1/4 tsp coriander powder
- 1/4 tsp cumin powder
- 1/4 tsp garam masala
- 1/2 tsp chaat masala
- 2 tbsp pav bhaji masala
- Chopped coriander leaves
- coriander leaves, onions, green chilli, green chutney, and lemon for Serving and Garnishing.
How to Make Masala Pav
1. Take Pav and cut it from the middle. I’ve taken small pavs but if you have bigger ones available, you can use them however, it tastes better with small pavs in my personal opinion. Don’t use burger buns.
2. Take a kadhai or pan. Grease it with butter.
3. Now, place the pav on the kadhai upside down so that the inner side gets cooked first. The flame of the gas should be medium.
4. Once it gets cooked and the color changes to light golden, we would flip it and cook the other side. Take them out on a separate plate and keep them aside for now.
5. Chop the following veggies:
2 finely chopped onion
1 finely chopped capsicum
3 chopped green chilli
2-inch chopped ginger
12-14 finely chopped garlic
2 finely chopped tomato
Keep them aside.
6. Take 2 tbsp butter in the same kadhai and let it melt.
7. As the butter melts, add 1 tsp of cumin. Stir and let it fry.
8. Now add chopped ginger and garlic. Stir fry it for 1 minute.
9. Add onion and green chilli. Stir and cook it. I added 1 more tbsp of butter. Mix well and stir often or the veggies will burn. You can adjust the amount of butter as per your taste and liking.
10. Add 2 finely chopped capsicum and 2 finely chopped tomatoes when the onion gets soft. Mix everything together.
11. After cooking for a minute, add salt as per taste. I added 1 tsp of salt. Mix well.
12. Now, add the following spices:
1 tsp red chilli powder
1/4 tsp coriander powder
1/4 tsp cumin powder
1/4 tsp garam masala
1/2 tsp chaat masala
2 tbsp pav bhaji masala
Stir and Mix everything well. You can adjust the spiciness as per your taste.
13. Add chopped coriander leaves and mix well. Now, we will let it cool slightly and keep it aside.
14. After a few minutes, place the stuffing in the middle of the pav. You can make as many masala pavs as you want.
15. Add 1 tbsp of butter to the kadhai and spread it well.
16. Place the masala pav in the kadhai and cook it well from all sides by continuously flipping.
17. Serve it with green chutney, chopped coriander, onion, and lemon. Garnish with chopped onion and coriander leaves.

Instructions
- Take Pav(Buns), Cut it from the middle. I've taken small pavs. Don't use burger buns.

- Add chopped coriander leaves and mix well. Now, we will let it cool slightly and keep it aside.
- After few minutes, place the stuffing in the middle of the pav. You can make almost 12 masala pav an serve 5 people.
- Add 1 tbsp of butter in the kadhai and spread it well.
- Place the masala pav in the kadhai and cook it well from all sides by continuosly flipping.
- Serve it with green chutney, chopped coriander, onion, and lemon. Garnish with chopped onion and coriander leaves.
