Rice Kheer or Rabdi Kheer Recipe is a very popular traditional Indian dessert that is creamy and delicious. It is made up of two of my favorite sweet dishes – Rabdi and Kheer. Rabdi is made using milk, where we cook milk with sugar until it is thickened, while kheer is a pudding made with rice, milk, sugar, and other spices for flavor. Kheer is a very popular dessert in India, and it is made and served at almost every festival and special occasion. Rabdi kheer is prepared by cooking soaked rice with milk until the milk thickens and forms a pudding-like consistency, and then it is refrigerated to make it even thicker. You can garnish it in any way you like to such as with chopped nuts like almonds, cashews, as well as raisins, and saffron strands. Serve it chilled (this makes it taste even better)or at room temperature.

Rice Kheer Ingredients

  • 1 liter of full-cream milk
  • 2 tsp water
  • 3 tbsp rice
  • 7-8 tsp sugar
  • 2-3 cardamom
  • 7-8 cashews
  • 7-8 saffron strands

How to make Kheer with Rice

1. To make Rice Kheer, we will take 3 tbsp of Rice. This is fine and small-sized rice. Wash it 3-4 times and then soak it in water, leave it aside for half an hour. The rice will slightly swell up to increase in size and quantity.

2. Put the rice in a mortar and pestle and pound it a little. The Rice is ready now to make the Kheer.

3. Take a Kadai and add a tsp of Desi ghee, and as soon as the ghee gets heated up, add 1 tbsp of chopped almonds and roast them a little.

4. Next, add a tbsp of chopped cashews and roast them as well. Now, take them out and keep them aside.

5. Now, add the rice that we pounded and roast it with the leftover ghee for 15-20 seconds.

6. Add 1 liter of boiled full-fat milk to the Kadai. Stir well and mix with the Rice. Don’t use toned milk as we are making Rabridaar Kheer, and for that, we only need full-fat milk. Also, we have already boiled the milk as it does not stick to the Kadai. Cook and also add the layer of malai that forms on the sides, back to the Kadai.

7. After cooking for 5 minutes, add half a cup of sugar to the Kadai.

8. Next, add 1/2 tsp of Saffron strands and 1/2 tsp of Green Cardamom Powder to add a distinct and rich flavor to the Kheer.

9. As you keep cooking the Kheer Mixture, it will thicken and reduce in quantity.

10. As the mixture reduces to 3/4 in quantity, we will turn off the gas and add the roasted nuts. Mix well. Keep aside for 10 minutes.

11. After 10 minutes, it will even get thicker. You can also refrigerate it to let it cool, and in my opinion, slightly cold Kheer tastes even more amazing.

Rabridar Rice Kheer Recipe

Kheer is a delicious and creamy Indian dessert that is usually made with rice, milk, sugar, and flavored with cardamom and saffron. You will just love the taste of this Rice Kheer.

Ingredients
  

  • 1 litre full cream milk
  • 2 tsp water
  • 3 tbsp rice
  • 7-8 tsp sugar
  • 2-3 cardamom
  • 7-8 cashews
  • 7-8 saffron strands

Instructions
 

  • Wash rice and soak it for 4-5 hours.
  • Mash it with your hands so that they get smaller. Keep it aside.
  • In a heavy-bottomed pan, add 2 tsp water and full cream milk and bring it to one boil.
  • Add rice to the milk and mix well.
  • Cook on low heat, stirring frequently, until the rice is fully cooked and the milk has thickened. This will take around 10-15 minutes.
  • Add sugar once the rice is cooked. Add cardamom powder, and crushed cashews. Cook for another 5-10 minutes until it thickens.
  • Turn off the flame once it gets thicker. Let the kheer cool down on room temperature.
  • Refrigerate it for half an hour before serving. It will get a Rabdi like texture.
  • Garnish with chopped nuts and saffron. Enjoy your homemade kheer.
