Kaju Katli Sweet or Kaju Katli Barfi is a delicious and super tasty Indian sweet that simply melts in your mouth and is one of my and my family members’ favorites too. It is also known as Indian cashew fudge since it is made with cashews. It is made and available everywhere in every Indian mithai store, but I like to make it at home during celebrations, special occasions, and festivals like Diwali or Holi and distribute it along with other dry fruits to our friends and relatives. I have been seeing this since I was a kid. Whenever guests came to visit us during festivals, they would bring a box of kaju katli and dry fruits. Making kaju katli is a very easy process but may not turn out to be perfect if you are making it for the first time. However, following this step-by-step Kaju Katli recipe with photos and a full Kaji Barfi recipe video below, you will be able to make the perfect kaju katli at home.
About Kaju Katli
The words “Kaju” means cashew and “Katli” means thin slices. Kaju Katli or Indian cashew fudge is a deliciously smooth sweet that just tastes like heaven and you will find it irresistible and simply keep coming back for one more. It is made with cashew nuts, sugar, water, and desi ghee. You can also add saffron or cardamom powder for extra flavoring. Kaju katli or Kaju Barfi is a very rich Indian sweet that is everyone’s favorite. It has a nutty texture that tastes amazing and feels so smooth and creamy. Today, I will be making it in the traditional manner or the method used by halwai stores, where I will add the cashew paste to the sugar syrup until we get the sugar syrup to a single-thread consistency.

Kaju Katli Ingredients
- 2 Cups of Kaju (cashew nuts) – Use only premium quality cashews
- 1 cup of sugar
- 1/2 cup of water
- 2 tbsp desi ghee
How to Make Kaju Katli at Home with Cashew Paste
1. To make Kaju katli, take 2 cups of cashew nuts(around 250 gms), we will first make cashew paste Take a grinding jar and all the cashew nuts into it.
2. Grind to make a fine powder. We need to grind it slowly in batches in pulse mode otherwise, cashew nut will leave fats and the powder will turn out to be sticky. Grind for a few seconds, stop, and then grind again.
3. Now, we will pour the powder through a sieve to remove any bigger parts left after grinding. You can also grind it again.
4. Our fine cashew powder is ready. Keep it aside for now.
5. Take a pan and add 1 cup sugar and 1/2 cup water. Cook on medium to high flame and let the sugar melt. Cook it until you can see that the sugar syrup gets to a 1-string consistency. Use the two-finger rule where you can check the consistency by spreading two fingers and a single thread forms.
6. Add the cashew powder to the syrup. Turn the flame to low and mix it well.
7. Mix well and cook for 7 minutes on low flame to medium flame.
8. After 7 minutes, add 1 tbsp desi ghee to the mixture, and cook for 2-3 minutes on low flame. Desi ghee adds shine to the kaju katli or kaju barfi.
9. As you can see, we have got the desired consistency for the cashew paste. Turn off the flame.
10. Take a butter paper. Apply some desi ghee to it.
11. Pour the kaju mixture or cashew paste on the butter paper.
12. Keep folding the paper from the sides to keep the cashew paste in between. The kaju mixture will cool and get thickened and form a dough-like shape.
13. The cashew paste will start to thicken as it cools down. Take the dough in your hands.
14. Place a greased butter paper on an inverted plate. Place the dough on it and slightly flatten it with your hands.
15. Place another greased butter paper above the dough.
16. Now, roll the dough to flatten and spread it into a thin sheet. Don’t make it too thin.
17. Remove the butter paper. The thickness of the kaju katli should be 1/3rd of an inch to 1/4th of an inch.
18. Apply silver Vark or edible silver foil to make it tempting and attractive. Leave it for 30 minutes. You can skip it and make kaju katli without silver coating too as it is purely for decoration.
19. Cut it into a diamond shape. The perfect kaju katli is ready to serve.
20. We will garnish the kaju katli with rose petals and cashews to serve them during festivals and family gatherings. Enjoy the perfectly delicious and soft kaju katli.
