Boondi Raita is a very popular raita recipe that is served as a side dish during festivals and family gatherings. It completes any meal and feast Boondi is of two types – salted and Masala. Salted Boondi is used in chaat recipes such as Pani Puri, and dahi vada while Unsalted Boondi is used to make sweets like Boondi ka Ladoo. Boondi ka raita is made with salted Boondi or small, fried, and crispy gram flour balls, Curd or yogurt, spices such as red chilli, black salt, cumin, coriander, and mint leaves. Boondi is easily available in the market so you can easily get it from grocery stores or buy from online stores. I’ve learned this way of making the Raita from my Mother-in-law and my Husband just loves this Boondi Raita. I always make it during any special occasions and whenever we make Pulav or Biryani. I’m sure that your family members and friends will also love this. Serve Boondi ka raita with Biryani, Paratha, and Pulao.

Ingredients to make Boondi Raita

  • 1 cup salted boondi
  • 400 gm curd
  • 2 chopped green chilli
  • 2 tbsp desi ghee
  • 1 tsp cumin
  • 1 tsp red chili powder
  • 1/2 tsp salt
  • 1/2 tsp black salt
  • Green coriander
  • Mint leaves
  • Water as required

How to make boondi raita (Step-by-Step Instructions)

1. To make Boondi Raita, we have to soak Boondi. Take one cup of salted Boondi in a mixing bowl and add 1 cup of warm water. Let it soak for 4-5 minutes and then, drain the excess water. This makes the Bundi very soft and it just melts in your mouth when mixed with curd. Keep it aside now.

2. In a separate mixing bowl, take 400 gm of curd and whisk it using a hand whisker until it gets a smooth and creamy texture.

3. Add 4 tbsp water to the curd and mix well. The smooth and creamy texture of curd is ready. Keep it aside.

4. In a Tadka pan(tempering pan), add 2 tbsp desi ghee, and 2 chopped green chilli. Fry and add 1 tsp cumin. Fry it too.

5. Add 1 tsp red chili powder to the Tadka mixture and mix well.

6. Add the Tadka to the mixing bowl that contains the curd mixure.

7. Add 1/2 tsp salt, 1/2 tsp black salt. Mix well.

8. Add the soaked Boondi to the curd mixture. Stir it. Let the Boondi soak in the yogurt for 10-15 minutes.

9. Add chopped coriander leaves to the mixture.

10. Garnish with red chili powder and mint leaves. Serve it with any meal and especially with Biryani and Pulav.

Ingredients
  

  • 1 cup salted boondi
  • 400 gm curd
  • 2 chopped green chilli
  • 2 tbsp desi ghee
  • 1 tsp cumin
  • 1 tsp red chilli powder
  • 1/2 tsp salt
  • 1/2 tsp black salt
  • coriander leaves
  • mint leaves
  • water as required

Instructions
 

  • Take one cup salted Boodi in a mixing bowl and add 1 cup water. Leave it aside for 3-4 minutes.
  • In a separate mixing bowl, whisk the curd until it's smooth and creamy. Add 4 tbsp water and mix well.
  • In a Tadka pan(tempering pan), add 2 tbsp desi ghee and fry 2 chopped green chilli, 1 tsp cumin.
  • Add Tadka to the curd mixture. Add 1/2 tsp salt, 1/2 tsp black salt. Mix well.
  • Add Boondi to the curd mixture after straining the excess moisture and stir gently. Let the Boondi soak in the yogurt for 10-15 minutes.
  • Add chopped coriander leaves to the mixture. Mix well.
  • Garnish with red chilli powder and mint leaves. Serve it chilled.
