In this homemade sun-dried tomatoes recipe, I’ll show you the easiest and traditional method of drying the tomatoes in the Sun which has been in practice for centuries. These juicy and ripe tomatoes are dried in the sun, which removes most of their moisture content, making the tomatoes chewy in texture and also making their flavor tangy, sweet, and savory. Usually, tomatoes are first halved and chopped into small pieces, salt is used to preserve them, and then they are laid out in the Sun for 4-5 days to let them dry out of most of the water and lose almost 90% of their weight. There are other modern methods to dry out the tomatoes, too, such as in the Oven and a Dehydrator. The sun-dried tomatoes keep their nutritional value after being dried out and are rich in Lycopene, antioxidants, and Vitamin C. These are then preserved and stored in an air-tight container using Olive oil. This process of drying the tomatoes in the Sun concentrates the sugar and salt present in the tomatoes.

In this season, Tomatoes are available at a very low price, so I usually buy them in bulk and use them in various dishes such as Pasta, Salads, Sandwiches, Pizzas, Soup, etc. I wanted to dry them to use them at a future date and use them in some recipes as their flavor and texture make any recipe unique, and they serve as a very valuable ingredient.   • 1.5 kg Ripe Tomatoes

How to make Sun-Dried Tomatoes in the Sun

1. To make sun-dried tomatoes at home, bring home 1.5 kg of fresh and ripe tomatoes from the market.

2. Properly wash and dry the tomatoes of any moisture. Now, cut out the top.

3. Chop the tomatoes into small or large pieces. Keep in mind that the tomatoes will shrink in size after drying out in the sun.

4. Place the chopped tomatoes on plates.

5. Sprinkle salt on the tomatoes.

6. Place the plates in an area where you get ample sunlight and which is dust-free. If the place attracts dust, you can also cover the tomatoes with a thin cloth.

7. Let the tomatoes dry for 4 days. Here, you can see how they have dried and shrunk in size in just 1 day.

8. After 4 days, the tomatoes have dried and shrunk in size, and the sun-dried tomatoes are ready.

You can use these dried tomatoes in other foods such as Salads, Pasta, Veggies, etc. You can store them in an airtight jar and refrigerate them. You can also make tomato powder; you just need to grind these dried tomatoes.
