How To Make Soya Chunks Manchurian (Step-by-Step)
1. Take 1 cup of soy chunks. Keep it aside.
2. Heat 1 liter of water in a container. Add 1 tsp of salt and mix well.
3. When the water is heated, add the soya chunks into it. Turn off the flame and let the soya chunks soak well in the water. Cover the lid and leave it aside for 15 minutes.
4. In the meantime, take a small bowl. Add ½ tbsp Vinegar, 1 tbsp Soy sauce, 1 tbsp Red chilli sauce, 1 tbsp Tomato ketchup, and 2 tbsp Schezwan sauce. Mix it well and keep the sauce aside.
5. Also, prepare a cornflour slurry by mixing 2 tbsp corn flour with 4 tbsp water. Keep it aside.
6. As 15 minutes have passed, check the soaked soya chunks. Filter the water and after that, squeeze out excess water from soya chunks by pressing them between your hands. Keep them in a separate bowl.
7. Add 4 tbsp cornflour, 2 tbsp all-purpose flour, ½ tsp black pepper powder, ½ tsp Red chilli powder, salt as per taste, 1 tbsp grated ginger garlic, and ½ tbsp soy sauce. Mix everything well.
8. Let’s proceed to fry it. Heat oil in a Pan to fry the soya chunks on medium flame. Fry them in batches and place them on kitchen tissue paper to absorb the excess oil. Keep them aside.
9. Chop the following veggies for making the gravy: ½ chopped capsicum, 1 chopped onion, 1 tbsp chopped garlic, 1 tbsp chopped ginger, and 2 chopped green chilli.
10. Heat 2-3 tbsp oil in a Kadai/Pan. When the oil is heated, add the chopped ginger and garlic and cook them for half a minute on high flame. After half a minute, add the chopped onion, capsicum, and green chilli. Cook them for a minute on high flame.
11. Add ½ tsp black pepper powder and salt. Don’t add a lot of salt as we already added it previously and the sauces also contain salt.
12. Now, Turn the flame to low and add the sauces that we kept aside earlier. Cook for a minute and then add the cornflour slurry. Mix well and add 2 tbsp of water and food color(optional). Stir and mix well until the gravy thickens. The gravy is ready. The gravy isn’t too watery and is almost dry as we want the soya chunks to be coated well with the spices.
13. Now, add the soya chunks to the gravy. Mix well. You can also garnish it with chopped spring onion.
14. Take It out on a plate and serve it immediately to your friends and family before they turn soggy. Enjoy this crispy snack.
