Aloo ki Kachori or Aalu ki kachori recipe is a popular Indian snack and breakfast recipe that is also very popular street food. Kachoris are very famous in India, especially in North India where different types of Kachoris with different varieties of stuffing are served such as Aloo Kachori, Moong dal Kachori, Aloo Pyaaz Kachori, and Urad dal Kachori. I’ve already shared the most variety of Kachoris and this one is one of my favorites other than Pyaaz Kachori as it is very healthy. In this Khasta(crispy) Aalu Kachori recipe and video below, I’ll show you step-by-step instructions on how to make Khasta Aloo ki Kachori with Aata instead of Maida and also share some tips to make sure that it comes out perfect on your first try. I have also used only wheat flour and completely skipped all-purpose flour without compromising the taste and flavor and making it healthier.

Kachoris are Indian street food famous in northern states and it contains spicy potato filling inside a thick crust which is made of all-purpose or wheat flour. Kachori is an Indian traditional street food found on every street and is usually served as a breakfast or snack item. Aloo Kachori Recipe Ingredients
- 3 cup wheat flour
- 1 tsp salt
- 1 tsp carom seeds(Ajwain)
- 6-7 tbsp desi ghee
- water as required
- 4-5 tbsp oil
- 1 tsp cumin
- 1 tsp fennel
- 2 red chilli
- 3 tbsp gram flour
- 1 tbsp grated ginger
- 2 chopped green chilli
- 1 tsp red chilli powder
- 1 tsp Amchur powder
- 2 tsp coriander powder
- 1/2 tsp garam masala
- 1/2 tsp cumin powder
- 1/2 tsp turmeric powder
- 1/4 tsp hing
- 1/2 tsp black salt
- salt to taste
- 1/2 tsp Kasuri methi
- 5 boiled and grated potato
- 5-6 tbsp coriander leaves
- oil for frying
How to Make Khasta Aloo Kachori Recipe (Step-by-step Instructions)
1. Take 3 cups of wheat flour in a bowl and add 1 tsp salt, 1 tsp carom seeds, 6-7 tbsp desi ghee, and mix well.
2. Add water and prepare a soft dough. Cover it and leave for 15 minutes.
Aloo Kachori Recipe masala
3. Take 4-5 tbsp oil in a kadhai/wok.
4. Add 1 tsp cumin, 1 tsp fennel, and 2 red chilli spice.
5. Add 3 tbsp gram flour and mix well on low to medium flame.
6. Add the following spices:
- 1 tbsp grated ginger
- 2 chopped green chilli
- 1 tsp red chilli powder
- 1 tsp amchur powder
- 2 tsp coriander powder
- 1/2 tsp garam masala
- 1/2 tsp cumin powder
- 1/2 tsp turmeric powder
- 1/4 tsp Hing
- 1/2 tsp black salt
- salt as per taste
- 1/2 tsp kasuri methi.
7. Add 5 boiled and grated potatoes and mix well. Add 5-6 tbsp coriander leaves and mix well.
8. Take the mixture in a bowl and after it has cooled down, prepare small balls.
9. Grease your hands with oil and knead the dough to make it soft.
10. Prepare small balls of dough. The balls should be a little bigger compared to the small potato balls.
11. Spread dough balls and put the potato mixture balls in the middle and then cover it.
12. Press with your hands and spread it to give it a circle or kachori shape.
13. Heat oil at low to medium flame in a kadhai/wok.
14. Deep fry kachoris on low to medium flame until they turn crisp and golden brown. Fry them at low to medium flame is important so that the filling inside is cooked properly.
15. Serve it with Green Chutney.

- Add cumin, fennel and red chilli spice.
- Add gram flour and mix well on low to medium flame.
- Add grated ginger,chopped green chilli, red chilli powder, amchur powder, coriander powder, garam masala, cumin powder, turmeric powder, hing, black salt, salt as per taste, kasuri methi.
- Add grated potatoes and mix well. Add coriander leaves and mix well.
- Take the mixture in a bowl and after it has cooled down, prepare small balls.
