How to make Paneer Kachori (Step-by-Step with Photos)

1. To make the dough for the paneer kachori, take 2 cups of maida(all-purpose flour), ½ tsp salt, and ¼ cups of refined oil or desi ghee in a mixing bowl. Mix well. This ensures that the kachori turns out to be crispy and doesn’t turn soggy for a long time.

2. We have to mix well until the flour breaks easily in our hands. Next, add water gradually to make a soft dough. Mix 1 tsp oil with the dough. Cover it and keep it aside for 20 minutes and in the meantime, proceed to make the kachori stuffing.

3. To make the Paneer kachori stuffing, prepare the following veggies: 2 finely chopped onions, 3-4 chopped green chilli, 1 tbsp grated garlic, 4 tbsp chopped coriander leaves, and 1 tbsp grated ginger.

4. Take 200 gm paneer and finely grate it. Keep it aside along with the veggies.

5. Heat 3 tbsp oil in a kadai/pan. Once the oil is heated, add 1 tsp cumin and the chopped ginger, garlic, and green chilli. Cook for a minute on medium flame. This is done to remove the rawness of ginger and garlic.

6. After a minute, add the chopped onions. Mix well and cook until the onions turn soft.

7. Once the onions change color, add salt as per taste. Mix well and cook for a minute.

8. Turn the flame to low and add the following spices: 1 tsp coriander powder, ½ tsp red chilli powder, and ½ tsp garam masala. Mix well. You can adjust the spiciness by changing the quantity of red chilli powder.

9. Now, add the grated paneer and mix it well with the spices. Add chopped coriander leaves and mix them well.

10. The stuffing is ready. Take it out and Keep it aside to let it cool at room temperature. Turn off the flame. Once the stuffing has cooled down, prepare small lemon-sized balls out of dough and keep them aside.
