Paneer Kathi Roll Recipe Ingredients
For Marinade
- 2 tbsp Mustard oil
- 1 tbsp Kashmiri red chilli powder
- ½ tsp garam masala
- ¼ tsp black salt
- 1 tsp Kasuri Methi
- ¼ tsp cumin powder
- ½ tsp coriander powder
- 1 tbsp ginger garlic paste
- 1 tbsp lemon juice
- salt to taste
- ½ cup curd
- 1 tbsp gram flour
For Dough
- 1 cup of Refined Flour(Maida)
- 1 cup wheat flour
- 1 tsp sugar
- 1 tsp salt
- 2 tbsp oil
- lukewarm water
For Filling
- 1 Green capsicum
- 2 large onions
- 1 tomato
- 2 tbsp oil
- 1 pinch red chilli powder
- salt to taste
200 gm of Paneer cubes
Maida and Desi Ghee for cooking Paratha
Green chilli sauce, Red chilli sauce, and Tomato ketchup
Green chilli, coriander leaves, lemon juice, and chat masala
How To Make Paneer Kathi Roll
Marinate Paneer Cubes
1. Add 2 tbsp of Mustard oil in a mixing bowl. Add 1 tbsp Kashmiri red chilli powder. Mix it well.
2. Add the following spices: ½ tsp garam masala, ¼ tsp black salt, 1 tsp Kasuri Methi, ¼ tsp Kasuri Methi, ¼ tsp cumin powder, ½ tsp coriander powder, 1 tbsp ginger garlic paste, 1 tbsp lemon juice, salt to taste, ½ cup curd, and 1 tbsp gram flour. Mix well.
3. Now, we will give it a smoky flavor. Place a small plate in between the mixture. Ignite a small piece of coal and place it on the plate. Pour a pinch of ghee and cover the lid. Leave it for 2 minutes.
4. After 2 minutes, remove the plate and add 200 gm of Paneer cubes. Marinate the Paneer cubes with the mixture. Cover the lid and keep it aside for 15-20 minutes.
Make Dough for Laccha Paratha
5. Take 1 cup of Refined Flour(Maida) in a mixing bowl. Add 1 cup wheat flour, 1 tsp sugar, 1 tsp salt, and 2 tbsp oil and mix well.
6. Add lukewarm water to make a soft dough and grease it with oil. Cover the lid and keep it aside for 15-20 minutes.
Prepare the Filling
7. Chop 1 Green capsicum, 2 large onions, and 1 tomato into julienne or thin strips.
8. Heat 2 tbsp oil in a Pan for 10 minutes. Add the marinated Paneer pieces into the oil.
9. Add the chopped veggies and mix well.
10. Add 1 pinch red chilli powder, and salt to taste. Mix well. The peppery filling for our Paneer Tikka Roll is ready. Keep it aside.
Make Laccha Paratha
11. Prepare small balls out of the dough. Apply flour and roll it into a Roti-like shape. Apply oil on it.
12. Now, fold it as shown below and in the video.
13. Bring it together and then fold it into a circle just like making a Laccha Paratha.
14. Dust with Maida and Roll it to make a Laccha Paratha.
15. Heat a Pan on medium to high flame. Cook the Paratha.
16. Apply desi ghee on both sides. Cook both sides until they become crispy.
17. The crispy Laccha Paratha is ready. Let’s proceed to make the Paneer Tikka Kathi Roll.
Prepare the Paneer Roll
18. Place the Paneer Tikka filling on the Paratha. Make sure to place it in the middle of the Paratha.
19. Pour green chilli sauce, red chilli sauce, and tomato ketchup.
20. Pour the chopped veggies like onions, green chilli, coriander leaves, lemon juice, and chat masala.
21. Fold the Paratha and use a food wrap.
22. The Chatpata Paneer Tikka Kathi roll is ready.
