Crispy Aloo Samosa Ingredients
For Dough
- 1.5 cups Refined wheat flour
- 1/2 tsp salt
- 1/2 tsp carom seeds
- 8 tsp desi ghee
- water as required
For Stuffing
- 6 boiled and mashed potatoes
- 3 tbsp oil
- 1 tsp fennel seeds
- 1 tsp cumin
- 2-inch grated ginger
- 2-3 green chilli
- 1/2 cup frozen peas
- 1 tbsp gram flour
- 1 tsp amchur powder
- 1 tsp garam masala
- 1 tsp cumin powder
- 2 tsp red chilli powder
- salt to taste
- 1/2 tsp turmeric powder
- 1 tsp coriander powder
- 1/4 cup chopped coriander leaves
For making samosa and Frying
- some water, maida & Oil
How to make Aloo Samosa Recipe – (Step-by-step Instructions)
To make Dough
1. Mix 1.5 cups refined wheat flour, 1/2 tsp salt, and 1/2 tsp carom seeds together in a mixing bowl.
2. Add 8 tsp desi ghee. Mix well and check if the mixture is ready.
3. Gradually add water to prepare a slightly hard dough. Cover and let it rest for 20 minutes.
To make Stuffing
4. Heat 3 tbsp oil in a kadai/wok
5. Add 1 tsp fennel seeds, and 1 tsp cumin and let them fry for a few seconds.
6. Add 2-inch grated ginger and 2-3 green chilli. Fry them.
7. Add 1/2 cup frozen peas and cook it for a few seconds.
8. Add 1 tbsp gram flour and cook for a few minutes on low flame. It is required to make the stuffing dry and crispy otherwise samosa gets soggy.
9. Add 1 tsp amchur powder, 1 tsp garam masala, 1 tsp cumin powder, 2 tsp red chilli powder, salt to taste, 1/2 tsp turmeric powder, 1 tsp coriander powder, and mix well. Cook for half a minute.
10. Add 6 boiled and mashed potatoes. Mix well.
11. Add 1/4 cup chopped coriander leaves. Mix well
12. The Stuffing for samosa is ready. keep it aside to let it cool.
To make Samosa
13. Knead the dough for 3-4 minutes. Prepare small balls from dough to make samosas.
14. Roll into an oval shape about 8 inches long and 6 inches wide.
15. Cut from the middle to divide it into two equal parts.
16. Apply water on the edges.
17. Join the edges together to make a cone-like shape.
18.Fill samosa masala in the cone. Apply water on the edges to seal it. Make a pleat.
19. The samosas are ready to fry now. Make all the samosas in the same manner.
20. Heat a few tablespoons of oil in a kadai or pan for frying the samosas on low flame.
21. Put samosas one at a time in the pan when you see light bubbles.
22. Keep stirring occasionally and fry them.
23. Samosas will take time to fry. Keep flipping and stirring. Be patient and fry until they turn golden brown.
24. Serve the samosa with Hari chutney/Green chutney or tomato sauce. Enjoy!

- Add boiled and mashed potatoes. Mix well.
- Add chopped coriander leaves. Mix well
- Stuffing is ready. keep it aside to let it cool.
To make Samosa
