Sabudana, also known as Sago or Tapioca Pearls is a popular ingredient during fasting days such as Navratri and Mahashivratri, which can be used to make different dishes such as Khichdi and Cutlet as it is vegan. This recipe uses Sago, Potatoes, Peanuts, Herbs, and Spices to make Sabu vada which is a fried Tikki/Cutlet and is served with Green Coriander Chutney.

Sabudana vada Ingredients
- 1 cup Sabudana
- 2 potatoes(Boiled & Grated)
- 2 chopped green chilli
- 1-inch grated ginger
- 4 tbsp Peanut powder
- salt to taste
- 1 tsp Cumin
- Coriander leaves
- Ghee for Cooking
Sabudana vada recipe step by step with pictures
1. Take 1 cup of Sabudana in a mixing bowl. (soak it in water for 2-3 hours)
2. Add 2 grated potatoes. (Boil the potatoes and grate them)
3. Add 2 chopped green chilli, 1-inch grated ginger, and 4 tbsp Peanut powder. (Dry roast 1/4 cup Peanuts and Grind it), salt to taste and 1 tsp Cumin.
4. Mix everything well. Also, you can add other ingredients as per your choice for added flavors like Coriander leaves.
5. Now, take a spoonful of the mixture. Roll it using your palm and give it a tikki-like shape.
6. Similarly, make all the Tikkis in the same manner.
7. Take a frying pan—heat 4 tbsp ghee. Add the Tikkis and fry on low to medium flame as soon as the ghee is heated.
8. Fry until the bottom side gets crisp and golden brown. Flip to fry the other side as well.
9. Fry until they get crispy.
10. As you can see, Sabudana Vada is crispy on the outside and soft on the inside.
Serve with Green chutney. Enjoy!
