The shape of this dish is like a donut while the texture is so fluffy. In South India, it is usually served with Coconut Chutney and Sambar. Medu Vada Recipe Video
Medu Vada Ingredients
- 1 cup soaked Urad Dal. Wash the Urad dal 3-4 times with fresh water and soak it in water for 4 hours.
- 2 green chilli
- 6-7 garlic cloves
- Salt as per taste
- ¼ tsp Hing
- 2 tbsp water
- 1 tsp cumin
- 1 cup oil
How To Make Medu Vada (Step-by-Step)
Prepare the Batter
1. Take 1 cup of soaked Urad Dal.
2. Add the Urad dal to a grinder. Now add the green chilli, garlic cloves, salt per your taste and preference, ¼ tsp Hing, and 2 tbsp of water. Do not add a lot of water or the batter will become thin.
3. Grind it to a smooth and fine paste-like consistency. The batter is thick and not too thin.
4. Pour the batter into a separate bowl and add 1 tsp cumin. Mix it well for at least 1 minute.
Fry Medu Vada
5. To check if the batter is ready for frying the Vadas, take a spoonful and pour it into a bowl full of water. If the mixture comes to the surface, it is perfect.
6. Now, apply water and start making vada out of the mixture. Make a hole in between and give them a donut-like shape. You can adjust the size as per your preference.
7. Heat 1 cup mustard oil in a kadhai/pan. Pour the vada mixture to let them fry. Flip to the other side once one side is fried well. Continue to flip and fry them well from both sides. Fry the other Vadas in the same manner.
8. Fry until the dish gets a nice golden color.
Serve these delicious and fluffy Medu Vada with Chutneys like Coconut Chutney and Green Chutney and also Sambar to your guests and family members.
